  • 3.3 to 4.4 lbs (1.5 to 2 kg) ribeye steak
  • Coarse salt
  • Olive oil

PREPARATION

Load the logs at the back of the oven. To achieve an intense fire of about 662°F to 752°F (350°C to 400°C), it will take approximately 20 minutes.

While the oven is heating, lightly massage the ribeye steak with olive oil to achieve a crispy surface. Then, place it in a stainless steel or cast iron dish.

COOKING

For a nicely grilled surface, open the oven flap and cook the ribeye steak for 5 to 7 minutes on each side (total cooking time of about 10 to 12 minutes).

Remove the ribeye from the oven, wrap it in aluminum foil, and let it rest for several minutes. To determine exactly how long to let the meat rest, a simple calculation is 1 minute for every 3.5 oz (100 grams) of meat. This allows the piece to "relax" and for the juices to evenly soak into the meat. Salt and pepper after slicing.

Note: Once cooked and wrapped in aluminum foil, the meat’s temperature will rise a few degrees more. We recommend removing your ribeye a few minutes before it reaches your desired doneness.
