- 0.18 oz fresh yeast (or 0.09 oz dry yeast)
- 0.28 oz salt
- 11.8 oz water
USTENSILS
- Stand mixer with dough hook
- Charcoal (if using a wood oven like the MARCEL)
- A small stainless steel container

PREPARATION STEPS
- In the bowl of the stand mixer (equipped with the dough hook), add the flour.
- Add the water (11.8 oz for fresh yeast, approximately 11.2 oz for dry yeast).
- Knead for 5 minutes at medium speed.
- Let rest for 1 hour at room temperature under a cloth or plastic wrap.
- If using dry yeast: dissolve it in the remaining 1.1 oz of lukewarm water during this time.
- Incorporate the salt into the mixture (1 minute at low speed).
- Add the crumbled or dry yeast (with the water).
- Knead for 5 minutes at low speed.
- Let rest for 30 minutes at room temperature.
- Perform a fold by bringing 1/3 of the dough over the remaining 2/3.
- Shape your bread as desired.
- Let rise for 1.5 hours at room temperature under a cloth.
- Dust and score the top of the bread for decoration.

COOKING IN A WOOD-FIRED OVEN
- Place a container of water in the oven to create humidity.
- Preheat the oven stone to 482°F (for a top-down heating oven).
- Bake the bread and mist the oven walls with water (⚠️ do not pour water on the stone).
- After 10-15 minutes, turn the bread for even cooking.
- Bake for about 25 minutes for a 0.55 lb loaf.
