PREPARATION STEPS

  1. In the bowl of the stand mixer (equipped with the dough hook), add the flour.
  2. Add the water (11.8 oz for fresh yeast, approximately 11.2 oz for dry yeast).
  3. Knead for 5 minutes at medium speed.
  4. Let rest for 1 hour at room temperature under a cloth or plastic wrap.
  5. If using dry yeast: dissolve it in the remaining 1.1 oz of lukewarm water during this time.
  6. Incorporate the salt into the mixture (1 minute at low speed).
  7. Add the crumbled or dry yeast (with the water).
  8. Knead for 5 minutes at low speed.
  9. Let rest for 30 minutes at room temperature.
  10. Perform a fold by bringing 1/3 of the dough over the remaining 2/3.
  11. Shape your bread as desired.
  12. Let rise for 1.5 hours at room temperature under a cloth.
  13. Dust and score the top of the bread for decoration.

COOKING IN A WOOD-FIRED OVEN

  1. Place a container of water in the oven to create humidity.
  2. Preheat the oven stone to 482°F (for a top-down heating oven).
